Grain salad with radish and cured cheese

  • 1 package MIA Prosciutto Style
  • 1 cup of Basmati rice
  • 1 cup Red Quinoa, rinsed
  • 1 cup Yellow lentils, rinsed
  • 1 cup fresh shelled fava beans (from about 1 pound pods) or frozen, thawed
  • Cured cheese (for ex. Asiago cheese)
  • 1 Radish
  • 2 teaspoons olive oil

PreparationCook Basmati rice in a medium pot of boiling salted water until tender and grains start to split. Do the same things with the yellow lentils and the red quinoa, they require 15-20 minutes of cooking.If using fresh fava beans, cook in a large saucepan of boiling salted water until tender, about 4 minutes. Drain, let cool and peel. (If using frozen fava beans, cook 2 minutes; transfer to a bowl of ice water, then drain).Toss Basmati rice, red quinoa, yellow lentils and fava beans in a large bowl; season with salt and olive oil.Now add some slices of MIA Prosciutto style, radishes and cured cheese cut into little squares.
