Wholegrain hummus sandwich

  • 1 Package MIA Carpaccio style
  • Wholegrain bread
  • 1 cup of chickpeas
  • 1 tomato
  • 1 white onion
  • 1 lemon
  • 1/2 cup tahini, well drained
  • 3 tablespoons extra virgin olive oil
  • Salt
  • Pepper

PreparationFirst, prepare the chickpea hummus: cut the lemon in half and squeeze into a small bowl. Add the chickpeas previously drained, then the tahini, salt, pepper and if needed some water to make it creamy.Put all the ingredients in a food processor and process until smooth, about one minute.With the motor running, stream in 3 tablespoons oil, then continue to process until hummus is very light and creamy, about 1 minute longer. Taste and season with more salt if needed.Now prepare vegetables: wash the tomato and the onion and cut them into thin slices.It’s time to assemble your sandwich spreading first some chickpea hummus on one half of the wholegrain bread and add some MIA Carpaccio style deli slices. Top with the thin slices of tomato and onion and cover the sandwich with the remaining half of bread. Buon appetito!
